An as-built is a different kind of drawing entirely

A short site walk with the construction set printed and a red pen, checking room by room against what's actually built, is usually enough to flag the handful of areas that genuinely need re-drafting rather than treating the whole building as suspect.
Windows are a good example of an element that's usually safe to carry forward unchanged, since glazing units rarely get substituted on site without a formal variation, though it's still worth a quick visual check against the original schedule just to confirm nothing was swapped for a different frame colour or opening configuration during a late materials shortage.
Formats and handover expectations

Keep your block definitions clean at handover, purge unused blocks, bind any xrefs, and make sure layer names follow whatever standard the client's facilities team expects, because an as-built set that lands in a messy, unpurged file undermines confidence in the accuracy of the record itself even if the geometry is correct.

Keep a simple photo archive alongside the final DWG and PDF handover too, dated and organised by room or area, since a facilities team years down the line troubleshooting an issue often finds a photo more immediately useful than the drawing itself for confirming what a finished condition actually looked like, and a record set that includes both the corrected drawing and the photographic evidence behind each significant change gives whoever inherits the building a much richer record than the drawing alone ever could.
Why this discipline is worth the extra hour
The catch here is that nobody checks an as-built drawing against the building again for years, sometimes decades, so errors baked in at handover tend to persist and get relied on by people who have no reason to doubt them. I've pulled hundreds of blocks into live drawings over the years and the record sets that hold up best are always the ones where someone actually walked the finished building rather than trusting the last construction issue was still accurate. It's genuinely one extra afternoon of verification against a lifetime of the drawing being treated as ground truth, and that trade is almost always worth it.
